My fascination with the Chinese interpretation of Italian cuisine all started back in 2004 during my first visit to China and my stay at the beautiful Renaissance® Yangtze Shanghai Hotel.

Located within the hotel is a wonderful restaurant called Raphael’s serving what the hotel describes as “fine, creative fusion served up in a cozy yet classy setting.” 

To my surprise I found it serving a broad collection of my favorite Italian classics. However, something was subtly different about the preparation.

You see modifying the classic Italian recipes to suite the the taste of the local population had somehow changed the character of their flavors just enough to make them uniquely “Chitalian.” 

So upon my return to the United States I began experimenting with a variety of homemade recipes in an attempt to recreate some of the most traditional Italian classics with my newly discovered Chinese “fusion food” interpretations. And now that we’ve successfully captured the flavors and spirit of both of these great culinary cultures, we’re pleased to share them with you via this “Vito Wong’s Chitalian Foods” Website and our variety of speciality “Chitalian Food” products.
